Today I made this delicious salad with a lot of vegetable protein, after seeing something similar.
Needed for 3 to 4 portions
1 cup cooked quinoa
600 g hard vegetables of choice
1 bag of pre-cooked chickpeas
A hand of finely chopped parsley
1/2 bunch of chives finely chopped
1 tbsp extra virgin olive oil
1 tbsp cranberry cream
Add the chickpeas with the olive oil, cranberry cream and herbs into a big bowl. Set this aside.
Cut the vegetables into bite-sized pieces, I chose broccoli, carrot, leek and chickpeas. Mix this with some olive oil, salt and pepper. Place the cooked quinoa on a baking tray and mix it with olive oil, salt and pepper. Roast both in the oven for 25 minutes at 200°C.
Now mix everything together into a delicious and filling salad with a crispy bite.
